A marriage of cultures celebrated with an exotic twist:
Simon and Asher were married in September 2018 and the celebration reception was at Chapel Barn in Bolney near Haywards Heath, West Sussex.
The couple felt strongly about using sustainable, local produce and celebrating the wonders that Sussex can offer. Also, they wanted the wedding feast to reflect Asher’s cultural heritage by serving food with Caribbean inspired features.
Toby relished the opportunity to research Caribbean cuisine and investigate the new possibilities that the flavours and ingredients could bring to traditional English food. Some dishes, such as porchetta, are a joy to make and loved by our guests, so he developed Jerk Porchetta exclusively for this event. The pork was stuffed with spring onion and Caribbean herbs, and treated with a dry-rub of clove, allspice, ginger and chilli.
All the meat came from responsibly reared animals, sustainably and organically farmed, and procured through Garlic Wood ethical butchers.The nettles grow in the gardens at Garlic Wood’s offices. The vegetables were sourced from various local organic farms according to the season. The beef gravy was laced with the bride’s favourite rum, and the spectacular Tropical Fruit Pavlova wedding cake was a breathtaking sight.
